Beijing cuisine is famous for its hundreds of dishes with special flavours. The other term of Beijing Cuisine is Chinese Imperial cuisine which clearly illustrates the extraordinary reputation of this cuisine.
Beijing, as the capital of the Chinese empire during several dynasties, stimulated the gathering of literati and officials. Many skilled chefs followed these people to Beijing and brought different cuisines to the capital which positively enriched the flavours of Beijing cuisine. The Beijing Cuisine is a magnificent eclectic retrospective of Chinese food culture.
One of the most well known dishes of Beijing Cuisine is Peking duck. It has become a favourite of connoisseurs in and outside China. Roasted Peking duck is processed in several steps: first the duck is rubbed with spices, salt and sugar, and then kept hung in the air for some time. Then the duck is roasted in an oven, or hung over the fire till it becomes brown with rich grease perspiring outside with a nice odour.
At Sea Palace we respect the grand imperial tradition. The crispy exterior of the Peking duck is cut in slices at the table side by the waiter. Along with the duck, we serve several dishes, including a dish of fine-cut shallot bars, a dish of cucumber bars and finally a dish of paste-like soy of fermented wheat flour (crepes).
Sea Palace serves this exquisite dish daily. Click here to make an online reservation and try this famous dish!.
